Green onions or scallions can add a lot to a variety of dishes both as an ingredient and as a garnish. Unfortunately, green onions can quickly go bad making them a difficult ingredient to keep on hand.

Luckily, there are easy ways to store them to ensure you always have these flavorful additions to liven up your cooking! 

Green onions are an easy vegetable to store, you can store them in the fridge, a windowsill or even freeze them! Storing them properly using one of these methods can even take their shelf-life from a few days to a few weeks or more.

How to Store Green Onions in the Fridge

If you’ve picked up a few bunches of green onions to use in your weeknight dinners, the best way to store them is in the fridge. However, you can’t just throw them in your vegetable drawer and expect them to be as healthy and crisp as when you bought them – green onions need to be stored correctly to maintain freshness.

Use a Damp Paper Towel

The first way you can store your green onions in the fridge is wrapped in a damp paper towel and stored in a Ziploc bag. First, remove any packaging (rubber band, labels, etc) and cut off the root of the green onion. Depending on the size of the Ziploc bag you have you can store the full stalk or cut them in half.

If your green onions are damp, pat them dry. Take about 3 sheets of paper towel and dampen it slightly, you don’t want it wet – mist from a spray bottle would be perfect to use here. Put half of your green onions in the middle of your paper towel and fold over both sides, tucking the top and bottom edges in to completely wrap your onions.

Finally, put your wrapped onions in a Ziploc bag and seal them, storing them in the crisper drawer of your fridge. To maintain freshness, re-moisten the paper towel anytime you notice it dries out and ensure you re-wrap and seal leftover onions anytime you use some.

Store in a Jar

The second way to store green onions in the fridge is by keeping the roots submerged in water. To do this, place them root side down in a jar (big enough to keep your onions from falling over) and fill with just enough cold water to cover the roots (about an inch or so).

Cover the tops of the green onions with a bag—the produce bag they came in, a Ziploc bag or grocery bag. The goal is to keep in some humidity but it doesn’t need to be sealed airtight. So if your bag is too loose around your onions, cinch it around the jar using a rubber band.

Store the jar in your fridge, and change the water regularly, ensuring the roots remain covered.

Regrowing Green Onions

A great way to “store” your green onions just so happens to be an easy way to regrow them too! If you use a lot of green onions when cooking, this is the perfect choice for storing your green onions and guaranteeing you always have fresh ones at hand for your recipes!

To regrow green onions, simply place your green onions root-side down in a mason jar or other container that can keep the stalks upright. Fill the jar with cold water to cover the roots, about an inch or so, and place in a sunny area like a windowsill.

If you need to use your onions, cut them with food scissors or a sharp knife leaving a few inches above the root and return to the root end to the jar. Regularly give your onions fresh, cold water, maintaining enough to cover the roots and you’ll have all the green onions you need for your dishes!

How long your green onions last depends on how you store them. When not stored properly in the fridge, green onions will typically last about 3 or 4 days. Stored properly in the fridge using one of the methods above, your green onions can last up to 2 weeks.

Freezing Green Onions for Longer Storage

Yes, you can freeze green onions!

To freeze green onions you will need either a few freezer-safe containers, Ziploc bags or reusable zip-top freezer bags. Start by prepping your green onions by removing any packaging and rinsing them under cool water. Once rinsed, pat dry to remove as much moisture as possible.

Depending on how you typically use your green onions you can slice them into rounds or angled cuts to have them prepped and ready to use straight from the freezer, or you can simply cut them in half to fit your container and leave them unsliced.

Put your green onions in your container or zip-top top bag, seal and freeze. After a few hours, shake the container or open and stir up the onions to help minimize clumping and put them back in the freezer.

They can be used straight from the freezer, no need to unthaw ahead of time. When frozen, your green onions should stay fresh for about 6 months.
